In this recipe, it is important to use fresh dill - it is especially aromatic and “adheses” more easily to pieces of fish.

Ingredients: 1 kg fish fillet, 1 tbsp. sugar and 2 tbsp. salt, 1 tsp. ground pepper, a small bunch of dill.

Mix the spices and rub the fish thoroughly with them. Roll the fish on both sides in finely chopped dill, cover with cling film and place in the refrigerator for 4 hours. After this time, we take out and cut our treat into slices.

Red fish in brine

Ingredients: 1 kg fish fillet, 700 ml. water, 5 black peppercorns, 3 bay leaves, 4 tbsp. salt.

Cut the fish fillet into arbitrary pieces and place in a convenient container. Add spices and bay leaves to boiling water, cook the brine for another 5 minutes, then cool and pour it over the fish. Close the container and leave it in the refrigerator overnight. The finished fish is slightly moist and very tender in taste.
